
Chocolate Peppermint Cookies

Patricia Hertz, registered dietitian with the Center for Fitness & Health at Shady Grove Medical Center, recommended these chocolate peppermint cookies as a delicious treat to make together as a family after the holidays.

Ingredients
- 1 cup of unsweetened almond butter (must be drippy and 100% almond based)
- 1/2 cup of unsweetened cocoa powder
- 1/2 cup of coconut sugar (or brown sugar)
- 1 teaspoon of baking soda
- 1 large egg
- 1 teaspoon of peppermint extract
- 1/2 cup of chocolate chips
- Pinch of sea salt (if using)
- 1/4 cup of crushed candy cane (if using)
Instructions
- Preheat your oven to 350 degrees.
- Combine all of the ingredients in a large bowl and fold in the chocolate chips.
- Line a baking sheet with parchment paper.
- Roll the dough into 1 tablespoon-sized balls and place onto baking sheet. Flatten slightly with your palm. If using, sprinkle with sea salt.
- Bake for 10-12 minutes.
- Remove from the oven and let them sit on tray for 20 minutes.
- If using, sprinkle with crushed candy cane.
- Place on a rack to cool completely.
