Cinnamon Sugar Roasted Chickpeas

Patricia Hertz, registered dietitian with the Center for Fitness & Health at Shady Grove Medical Center, shared these cinnamon sugar roasted chickpeas as a healthy option if you have a sweet tooth and are looking for a tasty snack.

Ingredients

Serving Size – 1 cup

  • 1 (15 ounce) can chickpeas, rinsed

  • 1 tablespoon sugar

  • 1 teaspoon ground cinnamon

  • ⅛ teaspoon ground pepper

  • 1 tablespoon avocado oil

Instructions

  1. Preheat your oven to 450 degrees F.

  2. Blot chickpeas dry. Spread on a rimmed baking sheet. Bake for 10 minutes. Meanwhile mix sugar, cinnamon and pepper in a small bowl.

  3. Transfer the chickpeas to a medium sized bowl and toss with the oil and the cinnamon-sugar mixture. Return to the baking sheet and bake, stirring once, until browned and crunchy, for 15 to 20 minutes more.

  4. Let them cool on the baking sheet for 15 minutes.
