Cucumber, Tomato & Feta Salad with Balsamic Dressing

Enjoy a refreshing burst of flavor with this crisp cucumber, tomato and feta salad, tossed in a balsamic dressing.

This easy-to-make recipe is the perfect side dish for your summer gatherings. Patricia Hertz, registered dietitian with the Center for Fitness & Health at Adventist HealthCare Shady Grove Medical Center, shared this recipe as a vibrant and refreshing dish that will bring a burst of flavor to any meal.

Ingredients

  • ¼ cup of balsamic vinegar
  • 2 tablespoons of extra-virgin olive oil
  • ¼ teaspoon of kosher salt
  • ¼ teaspoon of ground pepper
  • 4 cups of grape tomatoes
  • ½ cup of white onion (thinly sliced) 
  • ⅓ cup of chopped fresh basil
  • 1 ½ cups of halved and sliced cucumber
  • ¼ cup of Kalamata olives (halved)
  • ¼ cup of crumbled feta cheese

Instructions

  1. Combine vinegar, oil, salt and pepper. Whisk together in a large bowl.
  2. Add tomatoes, onion and basil. Stir.
  3. Refrigerate for at least one hour.
  4. Add the cucumber, olives and feta and toss to coat.
  5. Enjoy!
