
Cucumber, Tomato & Feta Salad with Balsamic Dressing

Ingredients
- ¼ cup of balsamic vinegar
- 2 tablespoons of extra-virgin olive oil
- ¼ teaspoon of kosher salt
- ¼ teaspoon of ground pepper
- 4 cups of grape tomatoes
- ½ cup of white onion (thinly sliced)
- ⅓ cup of chopped fresh basil
- 1 ½ cups of halved and sliced cucumber
- ¼ cup of Kalamata olives (halved)
- ¼ cup of crumbled feta cheese
Instructions
- Combine vinegar, oil, salt and pepper. Whisk together in a large bowl.
- Add tomatoes, onion and basil. Stir.
- Refrigerate for at least one hour.
- Add the cucumber, olives and feta and toss to coat.
- Enjoy!
