Quick to prepare and full of flavor, these grilled peaches are perfect for adding a touch of summer sweetness to any gathering!

Patricia Hertz, registered dietitian with the Center for Fitness & Health at Adventist HealthCare Shady Grove Medical Center, recommends this recipe as a simple and delicious way to savor ripe peaches. Easy to prepare and perfect for a sunny day, these grilled peaches are sure to be a crowd-pleaser.

Ingredients

  • 4 firm, ripe medium peaches, unpeeled, halved and pitted
  • 2 tablespoons extra-virgin olive oil
  • A pinch of salt
  • A pinch of coarsely ground pepper
  • 1 teaspoon lemon zest (optional)
  • 1 tablespoon of lemon juice (optional)
  • ¼ teaspoon smoked paprika (optional)

Instructions

  1. Preheat a gas or charcoal grill to high, which is around 450-500°F.
  2. Halve the peaches and remove the pits.
  3. Lightly brush cut sides of peaches with 1/2 tablespoon oil and place them cut-side down on the preheated grill.
  4. Grill until grill marks appear on the cut sides, which is about 4 minutes. Then flip and grill until the peaches are beginning to soften but still hold their shape for around 2 to 3 more minutes.
  5. Transfer the peaches to a platter. Drizzle the warm peaches with the remaining 1 1/2 tablespoons oil.
  6. Sprinkle evenly with salt and pepper. If desired, drizzle with lemon juice and lemon and smoked paprika.
  7. Enjoy as a dessert or side dish!
