Watermelon Feta Skewers

Beat the heat this summer with these watermelon feta skewers at your next gathering!

Patricia Hertz, registered dietitian with the Center for Fitness & Health at Adventist HealthCare Shady Grove Medical Center, recommends this recipe as an easy-to-make healthy appetizer for your summer gatherings. They're quick to assemble and are sure to be a hit with your friends and family!

Ingredients

  • 1 watermelon, cubed
  • 1 bunch basil leaves
  • 1/2 red onion, diced
  • 12 oz. block of feta, cubed
  • 1 cucumber (in half moons)
  • Balsamic glaze

Instructions

  1. Cut up the watermelon, onion, cucumber and feta.
  2. Assemble the skewers by layering watermelon, basil, red onion, feta and cucumber.
  3. Place the skewers onto a serving platter and drizzle balsamic glaze.
  4. Serve and enjoy!
